You really have to understand how much heat you are applying, how thick your filet is and how you want it prepared. Some people like it rare and some people well done. Searing the filet is a great start and that “seals” the flavor in. As for the rest of the cooking, with steak, the higher the heat the better your steak will be (as long as you don’t over cook it!). Some of the high end steak houses cook steak with lasers that get up to 2000 degrees. When considering how long you’re going to cook your filet, you need to understand how hot your heating source is.
